Cold Sesame Noodles

I made this for dinner last night.

Cold Sesame Noodles

3 cloves garlic, minced
Inch of ginger, minced
Hot chilies or sambal to taste
2 tbsp peanut oil
3 tbsp sesame oil
2/3 cup peanut butter
3 tbsp rice vinegar
3 tbsp soy sauce
juice of 1 lime
hot water
sliced extra-firm tofu
Cucumber, julienned
Green Onions julienned
Shanghai noodles

Sauté garlic, ginger and chilies in hot peanut oil until fragrant but NOT browned. Melt in peanut butter under very low heat with vinegar, soy sauce, lime juice and sesame oil. Turn off heat, add hot water until sauce has a creamy consistency. Toss with noodles and top with cold tofu, cucumber and onions. Serve chilled.

Cucumber and Mango Salad

3/4 cucumber cut into thin sticks
1 mango cut into think sticks or diced
PC Memories of Thailand Sauce (from Loblaws)

Toss together.

These two dishes compliment eachother very nicely. I ate them with kim chi and it was sooooooooooo good.
